Saute the onions and garlic until soft. Mix all the other ingredients together; and when the onion and garlic are done, mix those in too. Leave the mixture to set for 5 minutes (the dried TVP will absorb the liquid).
Either pack mixture into an oiled loaf tin (fits well into a 1 pound / 450 grams one), or form into a mound on a baking sheet and optionally rub with oil. Bake at Gas Mark 4/180C/350F for about an hour until set firmly and crisped up.
Fills a 1 pound / 450 gram loaf tin - serves 4.
I posted the following to rec.food.veg.cooking a few years ago. It's
a good recipe; I was just thinking the other day of making it again.
Try adding 2 tablespoons wholegrain mustard for a bit of extra zing.
"I got this from a post by Sully to the Vegfood mailing list in June 1997. I've made it a few times, and think it's really good. The recipe
originally comes from "Becoming Vegetarian", by Vesanto Melina and two other authors (I think Davis and Harrison). Sully says she might have changed it slightly, but if so not much. I have changed it only by adding metric weights for some of the ingredients, and rewording the directions to add my thoughts. The title of the recipe is not the original one."
