Cold Sesame Noodles

INGREDIENTS
    • 1 lb / 450 g udon or soba noodles (or whatever long pasta you'd like)
    • 3 T tahini (can substitute peanut butter)
    • 2 or 3 cloves minced garlic
    • 2 t minced ginger
    • 2 T tamari or soy sauce
    • 1/2 t chili powder
    • 1 T maple syrup
    • 1/2 t cider or rice vinegar (optional but really perks up the flavour)
    • 1 or 2 T sesame seeds (or more if you like)
    • 1 or 2 T sesame oil
    • 3 chopped scallions
    • 1/4 lb / 115 g snow peas
    • 2 T chopped coriander (optional)

METHOD
Cook noodles, drain and cool.

Mix all the ingredients except the snow peas, coriander and scallions. Taste and adjust seasonings as necessary - thin with water if too thick. Add noodles and raw snow peas and toss 'til well coated. Sprinkle top with scallions and coriander.

Fantastic recipe. I will defenitely make this one again.

I would only add 1 scallion (maybe) two. But three is a little too much imho.

this recipe is awesome. I added some red peppers for more color.
