INGREDIENTS
    • 1 1/2 cups boiling water
    • 1 cup cracked wheat/bulghur wheat
    • 2 bunches parsely, chopped finely
    • 1 bunch cilantro/coriander, chopped finely
    • 1 bunch green onione (scallions), chopped finely
    • 4 tomatoes, chopped finely
    • 3 medium sized cloves garlic, chopped finely
    • 3 medium lemons, juiced
    • 1/4 cup olive oil
    • 1 t celtic sea salt
    • Avocado slice, garnish

      Creamy Avocado Sauce (optional)

    • 1 avocado
    • 1 T apple cider vinegar
    • 1 t liquid sweetener

METHOD
Pour boiling water over cracked wheat or bulghur wheat. Let sit for 40 minutes, covered.

Chop the parsely, cilanto, green onions, tomatoes, and garlic finely. Add them to the wheat along with the lemon juice, olive oil, and celtic sea salt. Top with avocado slices.

If you want a creamy sauce, add an avocado sauce made by mashing one avocado with a tablespoon of apple cider vinegar and a teaspoon of sweetener (maple syrup?).
