INGREDIENTS
    • 1 t canola/olive oil
    • 1 clove garlic, chopped
    • 1/4 cup onion, chopped
    • 1 t cumin
    • 1 t coriander
    • 1 t black pepper
    • 1/2 t curry powder
    • 2 cups mixed veggies
    • 1 can low sodium diced tomatoes (with liquid)
    • 1 can pinto beans, drained and rinsed
    • Salt

METHOD
Heat canola/olive oil. Add chopped garlic and onion. Stir for 2 mins. Add cumin, coriander, black pepper and curry powder. Heat the mixture for 3 mins. Sprinkle some water so it won't get too dry.

Add mixed veggies of your choice. If it's still too dry, sprinkle some more water. Stir for 2 minute. Add tomatoes (with liquid). Cook gently over medium low heat until the mixture is heated through.

Add drained and rinsed pinto beans (or beans of your choice). Cook and stir occasionally - about 10 mins. Season with salt and serve.


NOTES
You can serve with brown rice or spaghetti (pasta of your choice) or wrap it in tortilla for a quick meal.
