Maazat Hummus wa Zaytoon (Palestinian Chickpea and Olive Appetizer)

INGREDIENTS
- 1 cup dried chickpeas, washed and soaked overnight in 8 cups of water
- 1/2 cup black olives, chopped
- 1/4 cup green onions, finely chopped
- 1 clove garlic, crushed
- Salt to taste
- 1/2 t paprika
- 1/8 t chili powder
- 2 T finely chopped fresh cilantro (coriander)
- 1 T olive oil
- 2 T lemon juice
METHOD
Place soaked chickpeas with their water in a saucepan and bring to a boil.
Cook over medium heat for about 2 1/2 hours, or until chickpeas are tender.
Drain; then place chickpeas in a salad bowl and allow to cool. Add the
remaining ingredients to the chickpeas; combine thoroughly and serve
immediately.
