Yellow Split Pea Puree

INGREDIENTS
- 1 cup dried yellow split peas
- 2 cups water
- 1/2 chopped onion
- 6 cloves garlic
- 1 bay leaf
- 2 sprigs rosemary (optional)
- Juice of 1 lemon
- 1 T olive oil (optional)
- Salt to taste (optional)
METHOD
Soak the peas for a day and cook in water with the rosemary and bay leaf and garlic and
onion until soft - about 15 minutes. Drain the peas and remove the bay leaf and
rosemary sprig. Puree in a food processor with the lemon juice and oil if you're
using it. Salt to taste, again if you're using it.
NOTES
Can be used as a spread or dip.
