Yellow Split Pea Puree

INGREDIENTS
    • 1 cup dried yellow split peas
    • 2 cups water
    • 1/2 chopped onion
    • 6 cloves garlic
    • 1 bay leaf
    • 2 sprigs rosemary (optional)
    • Juice of 1 lemon
    • 1 T olive oil (optional)
    • Salt to taste (optional)

METHOD
Soak the peas for a day and cook in water with the rosemary and bay leaf and garlic and onion until soft - about 15 minutes. Drain the peas and remove the bay leaf and rosemary sprig. Puree in a food processor with the lemon juice and oil if you're using it. Salt to taste, again if you're using it.

NOTES
Can be used as a spread or dip.
