Succotash

INGREDIENTS
    • 2 cups (dry) lima beans, soaked overnight
    • 5 cup of water
    • 2 2/3 cups sweet corn
    • 3 green peppers, sliced
    • 3 zucchini squashes, sliced in half circles
    • 2 T of sunflower seeds
    • 1 t of mustard seasoning

METHOD
Cook the beans until tender, drain and reserve the stock.

Saute the green peppers & zucchini for 4 minutes. Add the sweet corn and cook for a further 10 minutes stirring frequently.

Lightly roast the sunflower seeds in a dry pan or under the grill.

Mix all of the ingredients.

Add a little bean stock if mixture is too dry.

Serving Suggestion : serve Succotash on a bed of brown rice, noodles, or buckwheat pasta.


NOTES
I had this for dinner last night. It was fab. I heard that Succotash is a Native American recipe, though I don't know if *this* version is. Are sunflower seeds or zucchinis indigenous to the Americas?
