Saute the green peppers & zucchini for 4 minutes. Add the sweet corn and cook for a further 10 minutes stirring frequently.
Lightly roast the sunflower seeds in a dry pan or under the grill.
Mix all of the ingredients.
Add a little bean stock if mixture is too dry.
Serving Suggestion : serve Succotash on a bed of brown rice, noodles, or buckwheat pasta.
