Simmer the beans in enough water to cover them, until tender. Drain off most of
the liquid and mix all the ingredients in a big casserole dish, except the onion.
Place the onion in the center, shoving it under the beans. Cover the dish with
some tin foil and bake at 350F/180C for two hours, better 3-4 hours. Remove the onion before you serve.
This is a good dish to serve with tofu pups or soy burgers.
