Heat oil in a wok over a moderate heat, then add the rest of the ingredients
in order, giving a quick stir to each. When all ingredients are in the wok,
stir the rice around to break it up and mix it in.
Increase the heat to high and stir-fry for 3-4 minutes, making sure the
mixture is not sticking.
Turn into a bowl, garnish with coriander leaves and serve.
