Fruit-Nut Candy Squares

INGREDIENTS
    • 1 cup dried figs (about 1/3 lb / 150 g)
    • 1 cup pitted dates (about 6 oz / 170 g)
    • 1 cup dried apricots (about 1/3 lb / 150 g)
    • 1/2 cup nuts (about 2 oz / 60 g)
    • 1/2 cup moist, shredded coconut
    • 3 T orange juice
    • 2 t grated orange peel
    • 1/2 t cinnamon
    • Confectioners' sugar (easily made by blending 1 t cornstarch with 1 cup of raw sugar in a blender 'til as fine as you'd like it)

METHOD
Lightly grease an 8 x 8 x 2 inch (20 x 20 x 5 cm) pan.

Rinse the figs, dates and apricots and put through coarse blade of food chopper. Coarsely chop the nuts and combine with the fruits and coconut.

Mix the orange juice, orange peel and cinnamon, and add to the mixture. Mix well!

Turn into pan an press evenly over bottom. Chill well in refridgerator.

Sprinkle with the confectioners' sugar, cut into 1 inch / 2.5 cm squares. Remove with flexible spatula. Wrap in waxed paper to take with lunch.
