Blueberry Cobbler

INGREDIENTS
    • 1 pint / 470 ml blueberries
    • 1/3 cup water
    • 1 1/2 cups sucanat
    • 1 t grated lemon rind
    • 1 cup whole wheat flour
    • 1/2 t salt
    • 1 t baking powder
    • 1/3 cups margarine

METHOD
Preheat the oven to 350F/180C. Combine the berries, water, 3/4 cup of the sucanat and rind in a heat proof casserole dish. Bring to a boil on the stove and simmer for 2 minutes.

Meanwhile, combine the remaining sucanat with the flour, salt and baking powder. Cut in the margarine until the mixture is crumpy crumbly.

Sprinkle the crumbs over the fruit and bake about 25 minutes or until the top is browned, and serve it warm.
