Mac 'n' Cheese

INGREDIENTS
    • 1/2 lb / 225 g macaroni (Mrs Leeper's brand @ Whole Foods is vegan)
    • 1 1/2 cups soy milk (Silk is greeeaat)
    • 3 T vegan margarine (Hains, Willow...)
    • 3 T nutritional yeast (Red Star best)
    • 5 slices soy American cheese (Vegan by Soymage is good)
    • 2 t salt
    • 1/2 t garlic powder
    • 1/2 tsp white pepper
    • 2 T flour
    • 1/4 cup soy milk
    • 2 T dried dill

METHOD
Cook the macaroni to taste.

Mix in sauce pot with whisk on medium heat, the soy milk, margarine, nutritional yeast, soy cheese, salt, garlic powder and white pepper, until the cheese melts.

Shake flour and soy milk in a covered container, and add to the sauce pot.

Boil mixture, reduce heat, stir till thick. Mix with macaroni.

Add dried dill at end -- my kids can't do without it!
