Fudgy Cocoa Mint Cookies

INGREDIENTS
  • 3 cups unbleached or whole wheat flour or 1 1/2 cups of each
  • 1/4 cup cocoa powder
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons oil
  • 1 1/2 cups granulated sugar
  • 2 1/2 cups finely grated zucchini
  • 1 teaspoon peppermint extract
  • 1 cup chopped walnuts

METHOD
Preheat the oven to 180C/350F.

Mix together the flour, cocoa, baking soda and salt in a bowl. Beat the oil, sweetener, zucchini and peppermint extract together with a mixer. Add the dry ingredients and beat until smooth. Fold in the walnuts. Drop by spoonfuls onto cookie sheets and bake for about 12 minutes.

This would make a powdery mess, not bisuits, missing soy milk or sumthing?

It would seem that this recipe is wrong, but the zucchini (especially if you use frozen/defrosted zucchini)has a lot of liquid in it. This recipe is awesome. These are some of the best cookies I've ever tasted - vegan or otherwise! I had some frozen zucchini from the summer garden. We ran out of room in the freezer because our plants produced so much zucchini. Next year I'm going to hoard it all and freeze it to make these cookies!!!!
