Blueberry Almond Mousse

INGREDIENTS
    • 1 little thing of Original Vitasoy (8.4 fl oz / 250 ml)
    • 1 quart / 1 L unsweetened apple juice
    • 2 bars agar agar cut into 1 inch / 2.5 cm pieces
    • 1 t vanilla extract
    • 1 T lemon juice
    • 4 T almond butter
    • 1/4 cup toasted slivered almonds
    • 1 cup blueberries
    • 2 T maple syrup

METHOD
Combine agar agar and apple juice in a large saucepan and bring to a boil, then let simmer for 10 minutes, until the agar is dissolved. Pour mixture into a large bowl. Refrigerate for one hour.

Next, take it out of the fridge and throw it in a blender, and puree it while gradually adding the vanilla extract, lemon juice, almond butter and Vitasoy. Blend it all together until smooth and then refrigerate it for another hour.

Meanwhile, mix the blueberries with the maple syrup, crushing it a little bit, and when the hour's up, throw the blueberries on top of the mousse with the slivered almonds. This is way involved, so save it for a date or something I guess.
