Baked Peaches

INGREDIENTS
    • Big peaches
    • Lemon half
    • Brown sugar
    • Almond paste

METHOD
Halve the peaches and take out the pits. Arrange them on a tin-foil-lined cookie sheet, rub the cut surfaces with the lemon half, sprinkle with brown sugar, and bake at 425F/220C for about 20 minutes (til tender - time will vary according to the size of the peaches).

When they're done baking, fill each little pit-hole with a blob of almond paste. Return them to the turned-off but still warm oven to rest while you eat dinner. When you're ready to eat them, turn the oven to broil and toast them til the almond paste puffs up and gets a nice brown crust. This will happen quickly.

Serve.


NOTES
I fixed this for our pud last night, and everyone said I should write it down as it was so tasty. It's easy, too.

It's even better if you make your own almond paste so you can flavor it with orange blossom water instead of almond extract. It's not too much trouble to make, and keeps forever so you can always have some on hand.
