And tons and tons of questions.

We recently were asked some suggestions on creating a vegan "chicken" parmesan. Now, Boca has recently veganized their Chik'n Patties add that with some tofutti vegan cheese and you've got a start, although not the most exciting start.

Does anyone have any suggestions for creating it all from scratch?

Hi - I'm not sure exactly how you make chicken parmesan, but these items may help: vegan chicken-like cutlets from VegWeb are really easy to make and taste great (I bake mine in the oven at 350 for 20 mins, turning once, rather than frying them) http://vegweb.com

Hi there!

I've had a lot of success with using seitan for my parmesan. You can buy it in stores like Whole Foods etc. but I've now found that I prefer to make my own so I can spice and shape it however I want. The best, and least daunting recipe I found is in Sarah Kramer's newest book, La Dolce Vegan. Check it out!

Once you get your seitan cutlet made, just dredge it in flour and brown it in a pan for a few mins. on each side. Then you're ready to cover w/ sauce & cheez and bake.
