These muffins were great, though I did make some modifications. I used oat bran flour in place of both flours and used oat bran in place of the cornmeal (did this mostly to save some money for myself). Mine didn't rise very well, but I think I has to do with the egg replacer that I used (WonderSlim for any of you are curious). If you use his kind, or notice your first batch isn't rising well, just over fill the cups and they turn out beautiful! My mix made 14 muffins total. Thanks for the recipe, it's going in my box!
